Thursday Menu 2/23 - Spicy Peanut Noodles and Roasted Green Beans

Breakfast
A caramel nut brownie Luna bar.

Snack
A coconut cupcake.

Lunch
A hard-shell taco from Seniorita Burrita (tomato basil rice with vegetarian chili and salsa were the fillings of choice this time) and some baby carrots.

Dinner
Spicy Peanut Noodles and roasted green beans.


Snack
1 date.
A clementine.
1 fudge-mint cookie.
9 little squares of Maya Gold chocolate.

I wanted to post the samosa filling and coconut cupcake recipes today, but I had school and then The Boy and I went out to run some errands and now I'm going to watch Law & Order SVU for a while instead of posting recipes because I am a lazy bitch. But I am going to be posting them tomorrow for sure, so... stay tuned.

I can't wait to make that samosa filling, it sounds so good. I made the VwaV seitan last night, I think it turned out OK. It’s a little more chewy than I'd like, but at least it wasn't mushy or spongy and the flavor is quite nice. I'm using the leftover broth to flavor up some miso soup with buckwheat soba noodles that fell a little flat in the taste department. I try to cut down on salt, but soup just needs it sometimes.

shananigans - Oh man, it's amazing. I'm jealous of your extra chewy seitan. Mine is good, but as far as I'm concerned there's no such thing as too chewy where seitan is concerned.

jess - I heart SVU. I never used to, but my boyfriend got me into it recently. I suppose it's only fair, since I got him into Buffy and Angel when they were still on the air. I'm a convicted TV pusher. :)

Hey, I forgot to ask, have you tried freezing the seitan? As much as I like it I don't think I can go through all of it in the recommended 5 days, and it would be nice to keep it around for longer than that.

I have some in the freezer now, but I haven't used any of it yet. Possibly tomorrow. I'll post about it when I do.
