Pineapple Coffee Cake


I think I've posted a picture of this before, but I don't care. I made it again recently and it is SO good. Plus the picture came out well. This is Susan V's recipe from the Fatfree Vegan Blog; the recipe is here.

The only thing I did differently was to use a flax "egg" in place of ener-g. It didn't cause any problems.

I've tried this recipe a couple of times too, and LOVE it. Your photo looks great. And it's healthy enough to count as breakfast... isn't it?

I think so! It's whole wheat, low-sugar, fat-free, and there's even fruit in there. It's as healthy as a coffee cake is going to get. :)
