3/24 - Banana Bread

When you have bananas that are teetering on the edge of being rotten, it's banana bread to the rescue! I had a few that were very nearly black, so I whipped up the PPK's banana bread recipe with a few alterations. I subbed 2 Tbsp of corn oil and 1/3 c. of applesauce for the margarine, reduced the sugar to a scant 3/4 c. mix of brown and granulated, and used a mix of whole wheat, whole wheat pastry, and white flours, with a strong emphasis on the whole wheat side of things.

It was my first time making banana bread, vegan or not, and I'd call it a mild success. It's good, fairly moist, and excellent lightly toasted with a bit of Earth Balance. My one complaint is that the banana flavor is very subtle. The Boy says it's about right, so maybe my banana perception is just skewed. I think I need about 5 or 6 bananas in my banana bread to be happy. So basically I should just eat mashed up bananas.

Oh I totally agree with you--I love intense banana flavor in baked goods. I just love bananas. So versatile, so nutritious.

Yeah, me and baked goods have a complex relationship. I'm not sure we'll ever really be able to make it work, but I keep going back anyway. I love banana-flavored anything, but oddly enough I don't much care for straight up bananas themselves. I'll eat them sometimes, but they need to be totally yellow and not spotty at all or else the texture just turns me off.

I love banana bread too but haven't made one I'm crazy about yet. I tried the ppk version and I'm glad you cut down the sugar - I thought it was pretty good - just too too sweet and now that I think about it, could have used some more banana. good call.

I haven't made banana bread in forever mostly because my dogs LOVE bananas so there are never any around to get ripe enough for bread. I agree though - I like to taste the banana in a recipe!

My dog loves bananas too, he gets a bone stuffed with frozen banana and peanut butter when we leave for work in the morning, kind of works like a pacifier. When bananas are about to go bad I stick them in the freezer and wait until the urge to bake hits me. That’s the beauty of banana bread, you can do anything to those bananas before they get into the bread and no one will be the wiser. I use a modified version of the recipe in 1001 Low-Fat Vegetarian Recipes and it always turns out yummy.

I always keep some bananas in the freezer, mostly to use in smoothies. Sometimes I like to just blend them up and eat 'em like ice cream. I always eye that cookbook when I'm at the bookstore, I'll have to check it out.
